  • Start by boiling your potatoes to make your favourite plain mashed potatoes.
  • While the potatoes are cooking, trim, wash and chop the kale then put it in a pot of boiling water for about 20 minutes or until soft, or if using dehydrated kale, reconstitute in boiling water until soft.
  • Meanwhile: In a frying pan over medium heat soften your onions in butter and salt.
  • When the kale is soft, remove from heat, strain it and add to the onions. Sauté the kale with the onions for a few minutes, you may need to season at this point with some salt and pepper.
  • When the potatoes are cooked through, drain the water, and return the potatoes to the warm pot. Mash while still hot with butter and milk. The potatoes should be very smooth.
  • Mix the kale and onion mix into the mashed potatoes. Add white vinegar to taste, start slowly and taste your way to perfection, you will know when it happens. Taste, season with sea salt, black pepper (if needed) and nutmeg. Serve hot.
